This will be amazing or a disaster. No middle ground.
Sometimes less is more. Sometimes a little is enough. There definitely is such a thing as too much smoke, when it comes to particular products at least.
With baked goods, a couple of hours is usually enough. So we’ll do that this time too.
You can’t improve on a Mini Cheddar. Can you?
What we smoked
I kept it nice and simple and stole a couple of standard bags of Mini Cheddars from my children.
The Test
Setup wasn’t complex- the bags were swiped from the tiny paws and the small children pushed to the ground and loudly mocked. Standard. The biscuits were poured into one of our snazzy smoking cage-tube-thingies to a soundtrack of wails. The tube thing was then placed into the smoker for a little over an hour.
When done, my wife and the braver of the kids (the smallest of the two) joined me in giving them a go.
So does it smoke good?
We thought so. Smoke and cheese are good friends. The short time in the cabinet meant the Mini Cheddars were just kissed by the smoke, adding to the flavour rather than overpowering it.
There’s a reason McVitie’s bring out smoky cheese flavoured variations now and then. The profiles complement each other.
They were on the cusp of turning stale, so if we were to make them again, it would have to be on a dry day with low humidity. Potentially an interesting nibble when entertaining.
